Uovo Italiano

Great for Breakfast, Brunch, or Late Night Snack

Ingredients:

  1. 1 egg
  2. extra virgin olive oil
  3. coarse ground pepper
  4. romano cheese
  5. basil (preferably fresh)
  6. Sun of Italy Italian seasoning
  7. Italian Bread

    Optional

  1. mortadella
  2. capers
  3. fresh tomato

Preparation:

  1. Liberally cover the bottom of a small bowl(3" diam) with ex.vir.oilve oil
  2. Liberally grate in romano cheese
  3. Drop in 1 egg (whole or lightly whipped)
  4. Cover with grated romano chese
  5. Sprinkle basil to taste (best if fresh)
  6. Sprinkle on Sun of Italy Italian seasoning
  7. Coarse ground pepper to taste

    Optional

  1. Cut mortedella or salami or both into thin strips and criss cross on top
  2. Sprinklee with baby capers
  3. If you choose either of these, cover at this point with grated romano

Cooking:

  1. Cover the bowl tightly with plastic wrap
  2. Place in microwave
  3. Cook for 1 minute (more or less to desired egg texture)
  4. Slide out of bowl onto 1" thick slice of Italian bread (toast if you like)

    Optional

  1. best in Summer-top with one slice of fresh tomato at room temperature

Eat open face or cover with another slice of bread to eat as sandwich (adjust cooking time if cooking more than one egg at the same time)
