Summer Tomato Sauce

Ingredients:
- 15 Roma tomatoes (fresh),chopped
- 1 1/2 tsp garlic
- 1/2 cup dry vermouth
- 3/4 cup chicken stock
- 3 Tbs fresh basil, chopped
- 3 Tbs butter
- 2 Tbs olive oil
Preparation:
- 1) Saute garlic in butter and olive oil over medium low heat in large saute
pan until lightly browned. Season with salt and black pepper.
- 2) Add tomatoes and chicken stock and increase heat to medium. Cook for
25 mins stirring occasionally. Sauce should be bubbling moderately.
- Add vermouth and cook an additional 5 mins
- (Optional) Using hand mixer on low beat sauce for 1 min. Be care not to
splash as the sauce is extremely hot. This will break the tomatoes down to
more of a sauce consistency.
- Add fresh basil before serving.
