Summer Tomato Sauce

Ingredients:

  1. 15 Roma tomatoes (fresh),chopped
  2. 1 1/2 tsp garlic
  3. 1/2 cup dry vermouth
  4. 3/4 cup chicken stock
  5. 3 Tbs fresh basil, chopped
  6. 3 Tbs butter
  7. 2 Tbs olive oil

Preparation:

  1. 1) Saute garlic in butter and olive oil over medium low heat in large saute pan until lightly browned. Season with salt and black pepper.
  2. 2) Add tomatoes and chicken stock and increase heat to medium. Cook for 25 mins stirring occasionally. Sauce should be bubbling moderately.
  3. Add vermouth and cook an additional 5 mins
  4. (Optional) Using hand mixer on low beat sauce for 1 min. Be care not to splash as the sauce is extremely hot. This will break the tomatoes down to more of a sauce consistency.
  5. Add fresh basil before serving.
