Squash Casserole

Ingredients:
- 3 tbsp. uncooked rice
- 2 yellow squash, sliced
- 1 onion, sliced
- 2 tomatoes, sliced
- 2 ribs celery, chopped
- 1 green bell pepper, sliced thin
- 3/4 tsp. salt
- 1/2 tsp. pepper
- 2 tbsp. butter
- 1 tbsp. brown sugar
Directions:
- Preheat oven to 350 degrees.
- Lightly spray a 2-quart casserole dish with cooking spray.
- Layer rice, squash, onion, tomatoes, celery and green pepper.
- Sprinkle salt and pepper over top layer.
- Drop dabs of butter and brown sugar over vegetables.
- Bake for 1 hour.
Serves 6
