Squash Casserole

Ingredients:

  • 3 tbsp. uncooked rice
  • 2 yellow squash, sliced
  • 1 onion, sliced
  • 2 tomatoes, sliced
  • 2 ribs celery, chopped
  • 1 green bell pepper, sliced thin
  • 3/4 tsp. salt
  • 1/2 tsp. pepper
  • 2 tbsp. butter
  • 1 tbsp. brown sugar

Directions:

  • Preheat oven to 350 degrees.
  • Lightly spray a 2-quart casserole dish with cooking spray.
  • Layer rice, squash, onion, tomatoes, celery and green pepper.
  • Sprinkle salt and pepper over top layer.
  • Drop dabs of butter and brown sugar over vegetables.
  • Bake for 1 hour.

Serves 6
