Mozzarella Caprice Abruzzi

This is a real easy summer treat. If you grow your own tomatoes and basil, that is even better.

Ingredients:

  1. ripe tomatoes . . . red & yellow
  2. fresh basil leaves
  3. fresh mozzarella
  4. firm cucumbers
  5. onions (vidalia if possible)
  6. radishes
  7. extra vivgin olive oil
  8. balsamic vinegar
  9. ground black pepper

Preparation:

The traditional way is to place slices of red tomatoes on a plate and top it with a thin slice of mozzarella and basil leaf. Then drizzle the oil and vinegar on top and serve as an appetizer or snack.

But I like it this way . . .

  1. Cut the tomatoes, red and yellow, into wedges.
  2. Cut the mozzarella into dice size cubes, or you can use the small mozzarella balls.
  3. Slice the cucumber, radish and the onion and cut the onion rings in quarters.
  4. Use whole small or half large basil leaves.
  5. Combine in a bowl.
  6. Liberally add the vinegar, oil, and pepper.
  7. Toss gently a few times to cover all ingredients thoroughly.
  8. Drain off oil & vinegar and save in refrigerator.
  9. Chill for one hour and pour oil & vinegar back on and serve.
