Mozzarella Caprice Abruzzi
This is a real easy summer treat. If you grow your own tomatoes and basil, that
is even better.

Ingredients:
- ripe tomatoes . . . red & yellow
- fresh basil leaves
- fresh mozzarella
- firm cucumbers
- onions (vidalia if possible)
- radishes
- extra vivgin olive oil
- balsamic vinegar
- ground black pepper
Preparation:
The traditional way is to place slices of red tomatoes on a plate and top it
with a thin slice of mozzarella and basil leaf. Then drizzle the oil and vinegar
on top and serve as an appetizer or snack.
But I like it this way . . .
- Cut the tomatoes, red and yellow, into wedges.
- Cut the mozzarella into dice size cubes, or you can use the small mozzarella
balls.
- Slice the cucumber, radish and the onion and cut the onion rings in quarters.
- Use whole small or half large basil leaves.
- Combine in a bowl.
- Liberally add the vinegar, oil, and pepper.
- Toss gently a few times to cover all ingredients thoroughly.
- Drain off oil & vinegar and save in refrigerator.
- Chill for one hour and pour oil & vinegar back on and serve.
