Home-style Sicilian Chicken

Ingredients:

  1. 4 boneless, skinless, chicken breasts
  2. 1 tablespoons pesto sauce
  3. 2-3 tablespoons capers
  4. 1/4 cup sliced black olives
  5. 1/2 cup roasted red peppers
  6. 1/2 cup sliced onions
  7. 1/2 cup coarsley chopped shitake mushrooms
  8. 1 tablespoons balsamic vinegar
  9. 1 cup canned crushed tomatoes
  10. 1 teaspoon sugar
  11. 1/4 cup red wine
  12. 4 slices low fat mozzarella
  13. 2 tablespoons fresh basil

Preparation:

  1. Spread chicken breasts w/ pesto sauce. In large non-stick skillet coated with cooking spray, cook over med.-high heat 3-4 min. on each side or till chicken is tender & golden brown Remove chicken from pan & set aside.


  2. Place capers,olives,peppers,onions,mushrooms in vinegar in skillet & saute about 2 min. Remove & set aside 1/2 of the vegetable mixture. Add tomatoes sugar, & wine to skillet & stir all to combine. Place chicken in skillet & cook till hot. Arrange cheese slices on top of each breast. Cover pan & cook on low, till cheese melts. Spoon vegetables over chicken & garnish with fresh sliced basil & serve.

    This dish will serve 4 people.
