Sicilian Spaghetti Sauce

Ingredients STEP 1:
- 3 tablespoons virgin oil
- 1/4 yellow onion, chopped
- 4-6 garlic cloves, minced
In a skillet Sauté all of the above over low heat until onions are clear.
Ingredients STEP 2:
In a large Pot slowly heat over a low flame :
- 1- 29 ounce can tomato sauce
- 1-28 ounce can crushed tomatoes
- 1-12 ounce can tomato paste
- ½ cup of water
- 1 tablespoon sugar, plus 1 teaspoon salt
- (optional ) ½ cup of Carla Rossi burgundy table wine
- 1 teaspoon sweet basil, dried
- ½ teaspoon garlic powder with parsley
- 1 teaspoon oregano dried
Directions:
- Add ingredients from skillet STEP 1 to sauce, cook on medium heat for 15
minutes, then simmer for 2 hours.
- If you wish to add Italian sausages or ground beef to sauce, brown meat
in a large skillet (separate) approximately 1 ½ pds, add 1 cup of sliced
fresh mushrooms (optional).
- Drain fat and excess water from meat before adding to sauce.
- Simmer with sauce for 30 minutes.
- Last but not least boil water, cook pasta, drain.
- You are now ready to enjoy a plate of warm pasta topped with your homemade
Sicilian Spaghetti Sauce. For a traditional topping add fresh grated Parmesan
cheese if you desire. Enjoy with a glass of your favorite red wine.
24 servings (1/2 cup each) enough for the entire family
