Creamy Vodka Penne

Ingredients:

  1. 1 Box Penne
  2. 1tsp Olive Oil
  3. 1tsp butter
  4. 1 Shallott minced
  5. 2-3 Cloves of Garlic minced
  6. 1 28oz can diced or crushed tomatoes
  7. 1 cup chicken stock
  8. 1/2-1 cup heavy cream (depending on how rich you like it)
  9. 1 cup vodka
  10. 20 Sweet Basil Leaves chopped FRESH

Preparation:

  1. In a large skilet over medium heat add butter and olive oil.
  2. Saute shalotts and garlic 2-3 minutes or until tender.
  3. Cook it a little longer but don't burn the garlic.
  4. Over low heat add vodka and reduce by half (3-5 minutes).
  5. Return to med heat and add chicken stock and tomatoes (salt and pepper to taste).
  6. While this is simmering cook pasta drain and toss with fresh basil.
  7. Add cream to tomatoe base and bring back to a boil.
  8. Toss with pasta and serve with bread.
