Creamy Vodka Penne

Ingredients:
- 1 Box Penne
- 1tsp Olive Oil
- 1tsp butter
- 1 Shallott minced
- 2-3 Cloves of Garlic minced
- 1 28oz can diced or crushed tomatoes
- 1 cup chicken stock
- 1/2-1 cup heavy cream (depending on how rich you like it)
- 1 cup vodka
- 20 Sweet Basil Leaves chopped FRESH
Preparation:
- In a large skilet over medium heat add butter and olive oil.
- Saute shalotts and garlic 2-3 minutes or until tender.
- Cook it a little longer but don't burn the garlic.
- Over low heat add vodka and reduce by half (3-5 minutes).
- Return to med heat and add chicken stock and tomatoes (salt and pepper to taste).
- While this is simmering cook pasta drain and toss with fresh basil.
- Add cream to tomatoe base and bring back to a boil.
- Toss with pasta and serve with bread.
